Wild Rice Mushroom Soup
With true cold weather here, we can all agree it’s time for SOUP! Warm up with this hearty Wild Rice Mushroom Soup, packed with earthy flavors and wholesome ingredients. It’s a cozy, comforting dish perfect for chilly days. Grab your mushrooms from Také Box or Mycelium Express at the next market!
Ingredients
- 1 medium yellow onion
- 2 celery stalks
- 3 medium carrots
- 12 ounce shiitake mushrooms
- 3 garlic cloves
- 2 tbsp olive oil
- 2 tbsp butter
- 8 cups vegetable broth
- 1 tsp garlic powder
- 1 cup wild rice
- 1 tbsp dried thyme, oregano, dill
- Salt & pepper to taste
- ½ cup milk
- ½ cup parmesan cheese
Directions
- Dice onion, celery, carrots. Clean mushrooms & slice. Mince garlic.
- Add olive oil & butter to a soup pot. Add onion, celery, carrot, & cook occasionally stirring for 5 minutes until lightly browned. Add mushrooms & saute for 2 minutes. Add the garlic & stir for 2 minutes.
- Add veggie broth, wild rice, spices, salt & pepper. Bring to a simmer. Cover the pot & simmer for 45 min to 1 hour, until rice breaks open, stirring occasionally.
- When rice is fully cooked, stir in milk & Parmesan cheese. Remove 2 cups from the soup using a liquid measuring cup (including veggies, rice & broth) & place in a blender, pour back into soup.
- Adjust seasonings as desired. Store refrigerated for 3 days.
