Rustic Roasted Pumpkin Sandwich

It’s sandwich season! Well, to be fair, it’s always sandwich season. But now, you can enjoy autumnal delights like roasted pumpkin and even pumpkin seeds - your special reward when working with whole pumpkin. Stop by the market to pick up fresh bread from Leo’s and pumpkins from Johndale’s, 5D Natural Farms, or L’Hoste Citrus for this belly warming Rustic Roasted Pumpkin Sandwich.

Ingredients
  • 8 ounces roasted pumpkin (cut into wedges) 
  • 3 tbsp dressing of choice 
  • ½ cup cherry tomatoes (halved or grape tomatoes) 
  • 4 slices sourdough bread (grilled or toasted) 
  • 1 ½ cups baby arugula or leafy green of choice 
  • 3 tbsp toasted pumpkin seeds
Directions
  1. Heat oven to 425 degrees F. Toss pumpkin in 1 ½ tbsp dressing of choice & with salt & pepper if desired.
  2. Roast for 20 minutes. Remove from oven & turn wedges. Add tomatoes. Return to oven & roast 10 to 15 minutes until tomatoes are softened & pumpkin is golden & tender. 
  3. Spread remainder of dressing on the bread. Evenly top 2 slices with pumpkin, tomatoes, & arugula. Evenly sprinkle with pumpkin seeds, then top with the remaining bread & enjoy.
