Mushroom, Corn & Cherry Tomato Pasta

If you’ve never had corn with pasta - this easy and light summer dish will open up a whole new world for you! Grab your favorite pasta shape from Costantini Pasta, some cherry tomatoes from Isabel’s, the Monica’s, or Johndales Farm, and mushrooms from Také Box for this fabulous pasta. Don’t forget the fresh basil - a bright and redolent summer staple!

Ingredients
  • 8 oz pasta of choice
  • 1 cup mushrooms, sliced
  • 1 cup corn kernels 
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced 
  • ¼ cup grated Parmesan or Mozzarella cheese 
  • ¼ cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste
Directions
  1. Cook pasta according to package instructions. Drain & set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the garlic & saute until fragrant. 
  3. Add the mushrooms & cook until they start to brown, about 5 minutes.
  4. Stir in the corn, & cook for another 3 minutes.
  5. Add the cherry tomatoes & cook until they just begin to soften, about 2 minutes.
  6. Toss the cooked pasta with mushroom, corn, and tomato mixture. Season with salt & pepper. 
  7. Sprinkle with Parmesan cheese & fresh basil before serving.
