Goat Cheese Garlic Roasted Sweet Potatoes

This time of year, there are loads of sweet potatoes at market! Roast them for a quick, easy dish that can feed many mouths. Perfectly tender on the inside, caramelized and crisp on the edges—there are few treats as delicious as sweet potatoes roasted with fresh herbs, garlic, and goat cheese from Huckleberry’s Creamery. Try this recipe adapted from EatWell101!

Ingredients

  • 4 sweet potatoes, peeled and sliced
  • 4 teaspoons minced garlic
  • 2 tablespoon olive oil
  • 4 tablespoons butter, melted
  • 8 tablespoons crumbled goat cheese from Huckleberry Creamery
  • 1 tsp garlic salt
  • 1 tsp fresh cracked pepper
  • 1 tsp Italian Seasoning
  • Fresh thyme

Directions

Preheat your oven to 400ºF (200ºC). Peel and cut sweet potatoes into thin slices.

Place the sweet potato slices in a resealable bag. Throw in the garlic, oil, butter, salt, pepper, cheese, and Italian seasoning and shake until well coated.

Lightly butter a baking dish and arrange coated sweet potatoes into a spiral. Sprinkle with fresh thyme and a little cheese if you like.

Bake sweet potatoes for 30-35 minutes. Serve your roasted sweet potatoes warm and sprinkle with fresh thyme. Enjoy!
